Blueberry Turkey BurgersJuly is National Blueberry Month, which is a great reason to enjoy this colorful and tasty fruit that is packed with fiber, vitamin c and other healthful nutrients! Try this blueberry recipe this month (adapted from the National Blueberry Council) or keep it simple by adding blueberries to salads, Greek yogurt and low-fat cottage cheese.

Blueberry Turkey Burgers

Recipe makes 4 servings

Ingredients

  • 1 lb extra lean ground turkey
  • ¾ cup fresh blueberries
  • 2 tbsp light soy sauce
  • 1 tbsp ground ginger

Directions

  1. Combine all ingredients in a large bowl
  2. Form 4 patties
  3. Grill patties until an internal temperature of 165 degrees is reached, approximately 4 minutes on each side

Blueberry Ketchup

Ingredients

  • 1 ½ cup fresh blueberries
  • ½ cup minced onion
  • ¼ cup rice wine vinegar
  • ¼ cup splenda brown sugar blend
  • ½ tsp salt
  • 1 tbsp ginger

Directions

  1. Combine all ingredients in a medium saucepan and bring to a simmer. Cook for 15 minutes
  2. Remove from heat and cool
  3. Blend in a food processor or blender until smooth
