Mediterranean Tuna Salad
- 2 (6-ounce) cans of tuna (canned in water with no salt added), drained well
- 1/8 cup light mayonnaise
- 1/8 cup non-fat, plain Greek yogurt
- 1 (15-19 – ounce) can of beans – i.e. chickpeas, kidney beans, black beans, ect.
- ½ cup finely chopped red onion
- 1 red bell pepper, diced
- Salt and Pepper to taste
- Chopped artichoke hearts
- Black or green olives
- Sliced Tomatoes
- ¼ avocado
230 calories a serving provides 7 grams of fiber and 18 grams of protein.
Serve over a bed of lettuce or wrapped in a 100-calorie whole grain tortilla to add some additional fiber to your meal!
