Mediterranean Tuna Salad

Mediterranean Tuna SaladIngredients:

  • 2 (6-ounce) cans of tuna (canned in water with no salt added), drained well
  • 1/8 cup light mayonnaise
  • 1/8 cup non-fat, plain Greek yogurt
  • 1 (15-19 – ounce) can of beans – i.e. chickpeas, kidney beans, black beans, ect.
  • ½ cup finely chopped red onion
  • 1 red bell pepper, diced
  • Salt and Pepper to taste

Optional Ingredients:

  • Chopped artichoke hearts
  • Black or green olives
  • Sliced Tomatoes
  • ¼ avocado

230 calories a serving provides 7 grams of fiber and 18 grams of protein.

Serve over a bed of lettuce or wrapped in a 100-calorie whole grain tortilla to add some additional fiber to your meal!
