Protein Packed Pancakes
- 1/3 cup dry steel cut oats (not instant!)
- 1/3 cup low-fat cottage cheese
- ¼ cup egg whites
- 1tsp vanilla extract (or 2 packets of calorie free sweetener)
- *bonus protein: ¼ scoop protein powder (preferably vanilla)*
Add ingredients to a bowl; mix/blend all ingredients together until forms a smooth batter. Pour ¼ cup of batter onto lightly greased or non-stick pan and cook on both sides. Repeat with remaining batter. Top with fresh fruit and enjoy!
